1 lb green beans
2 lbs zucchini
4 stalks celery
1-2 bunches parsley
4 cups clean filtered water
Extra virgin olive oil or unsalted organic butter (optional)
Cut up the zucchini, green beans and celery. Steam in a stainless steel or porcelain pot using the filtered water. Blend with the cooking water and parsley to the consistency of pea soup. You may add a small amount of extra virgin olive oil or unsalted organic butter if desired. Variations include adding garlic, onions, ginger or other fresh herbs
